Kale salad with strawberries and feta

Delicious kale salad with a burst of sweetness from fresh strawberries and a tangy kick from crumbled feta cheese. Perfect balance of flavors!

Ingredients:

  • 3 teaspoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • ½ teaspoon vanilla extract
  • 1 tablespoon poppy seeds
  • ⅛ teaspoon black pepper
  • 340g strawberries
  • 200g fresh spinach
  • ½ cup crumbled feta
  • ⅓ cup roasted hazelnuts, roughly chopped

Instructions:

  1. Place the olive oil, balsamic vinegar, honey, vanilla extract, poppy seeds, and black pepper in a fresh jar with a tight-fitting lid. Shake well to mix the dressing together, then set aside.
  2. Remove the hulls and halve the strawberries.
  3. Combine the spinach, strawberries, crumbled feta, and hazelnuts in a spacious serving bowl. Right before serving, pour the dressing over the salad.
