Kale salad with strawberries and feta
Delicious kale salad with a burst of sweetness from fresh strawberries and a tangy kick from crumbled feta cheese. Perfect balance of flavors!
Ingredients:
- 3 teaspoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- ½ teaspoon vanilla extract
- 1 tablespoon poppy seeds
- ⅛ teaspoon black pepper
- 340g strawberries
- 200g fresh spinach
- ½ cup crumbled feta
- ⅓ cup roasted hazelnuts, roughly chopped
Instructions:
- Place the olive oil, balsamic vinegar, honey, vanilla extract, poppy seeds, and black pepper in a fresh jar with a tight-fitting lid. Shake well to mix the dressing together, then set aside.
- Remove the hulls and halve the strawberries.
- Combine the spinach, strawberries, crumbled feta, and hazelnuts in a spacious serving bowl. Right before serving, pour the dressing over the salad.
