Kale salad with dates, parmesan and almonds

Ingredients:

  • 1 teaspoon honey

  • 2 bunches kale, stems removed, leaves shredded or finely chopped
  • 2 tablespoons extra-virgin olive oil
  • 1/3 cup sliced almonds
  • 8 dates, pitted and chopped
  • 70g Parmesan, shaved with a peeler

Instructions:

  1. Combine juice, shallot, honey, salt, and pepper flakes in a bowl. Add kale and mix thoroughly. Allow it to marinate for 20 minutes. Incorporate oil. Toast almonds in a dry pan over medium heat, stirring constantly, until they slightly darken, which should take about 1 to 2 minutes.
