Kale salad with cranberries

Ingredients:
- 2 tablespoons finely chopped shallot
- 1 ½ tablespoons rice vinegar
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon honey
- 1 teaspoon grated orange zest
- 3 tablespoons orange juice
- ½ teaspoon salt
- ¼ teaspoon ground pepper
- 7 cups stemmed and torn mixed kale, such as lacinato, curly and/or red
- ½ cup sweetened dried cranberries
- ¼ cup sliced almonds
Instructions:
- Combine chopped shallot and vinegar in a spacious bowl; allow it to sit for 5 minutes. Blend in oil, honey, zest of orange, juice of orange, salt and pepper. Incorporate kale and delicately knead the mixture by hand until the kale is slightly softened, around 3 minutes. Present the salad on a serving dish; garnish with dried cranberries and sliced almonds.
