Kale & quinoa salad with cranberries

Ingredients:
- 1 bunch lacinato kale, stemmed and coarsely chopped
- ¼ cup extra-virgin olive oil
- 2 tablespoons sherry vinegar
- 1 tablespoon chopped shallot
- ½ teaspoon salt
- ½ teaspoon ground pepper
- 1 cup thinly sliced celery
- 1 cup cooked quinoa
- 1 medium Granny Smith apple, unpeeled, thinly sliced
- ⅓ cup dried sweetened cranberries
- ⅓ cup chopped walnuts, toasted
- ⅓ cup blue cheese, crumbled
Instructions:
