Kale & quinoa salad with cranberries

This delightful kale and quinoa salad with cranberries is a perfect blend of flavors and textures, making it a nutritious and delicious choice for any meal.

Ingredients:

  • 1 bunch lacinato kale, stemmed and coarsely chopped
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons sherry vinegar
  • 1 tablespoon chopped shallot
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 1 cup thinly sliced celery
  • 1 cup cooked quinoa
  • 1 medium Granny Smith apple, unpeeled, thinly sliced
  • ⅓ cup dried sweetened cranberries
  • ⅓ cup chopped walnuts, toasted
  • ⅓ cup blue cheese, crumbled

Instructions:

  1. In a medium bowl, put the kale. Combine oil, vinegar, shallot, salt, and pepper in a small bowl and mix until fully blended. Pour 2 to 3 tablespoons of the dressing onto the kale; lightly massage until the leaves soften a bit, for about 1 to 2 minutes.
  2. Include celery, quinoa, apple, cranberries, walnuts, and cheese; pour the rest of the dressing over them and mix thoroughly.
