Kale, quinoa and avocado salad
Indulge in a nutritious kale, quinoa, and avocado salad bursting with freshness and flavors. A perfect blend for a wholesome meal.
Ingredients:
- 2/3 cup quinoa
- 5 kale leaves, torn into bite-sized pieces
- 1/2 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup vidalia onion, chopped
- 1/4 cup bell pepper, chopped (orange or yellow)
- 1/3 cup sweet corn, cooked
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 tablespoons Dijon mustard
- Salt and freshly ground black pepper to taste
Instructions:
- Prepare the quinoa as per the instructions on the packaging. Allow it to cool.
- Place the kale in a steamer basket above boiling water in a saucepan. Cover and steam for 5 minutes. Then move it to a big serving plate.
- In a big bowl, mix the quinoa with the other ingredients. Pour this mix over the steamed kale. Combine the dressing ingredients in a small bowl using a fork and pour it over the salad.
