Kale, quinoa and avocado salad

Indulge in a nutritious kale, quinoa, and avocado salad bursting with freshness and flavors. A perfect blend for a wholesome meal.

Ingredients:

  • 2/3 cup quinoa
  • 5 kale leaves, torn into bite-sized pieces
  • 1/2 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup vidalia onion, chopped
  • 1/4 cup bell pepper, chopped (orange or yellow)
  • 1/3 cup sweet corn, cooked
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Prepare the quinoa as per the instructions on the packaging. Allow it to cool.
  2. Place the kale in a steamer basket above boiling water in a saucepan. Cover and steam for 5 minutes. Then move it to a big serving plate.
  3. In a big bowl, mix the quinoa with the other ingredients. Pour this mix over the steamed kale. Combine the dressing ingredients in a small bowl using a fork and pour it over the salad.
