Kale, fava, sultana and walnut salad

Ingredients:
- 2 tablespoons extra-virgin olive oil, divided
- 1/2 cup shelled fava beans (blanched and slipped from skins)
- 1-2 garlic cloves, peeled and minced (start with 1)
- juice of 1/2 lemon
- 1/2 teaspoon salt
- 1/4 - 1/2 teaspoons crushed red pepper flakes
- 2 tablespoons sultanas (or plump golden or purple raisins)
- 1/4 cup walnuts, toasted and coarsely chopped
Instructions:
- Place torn kale leaves in a large mixing bowl and drizzle 1 tablespoon of olive oil over them. Gently massage the leaves with the oil until they are all well-coated and tender. Add in the blanched favas that have been shelled twice.
- In a separate small bowl, combine the remaining 1 tablespoon of olive oil, minced garlic, lemon juice, salt, and red pepper flakes. Allow it to rest for 5 minutes.
- Add the sultanas and toasted walnuts to the kale-fava mixture, then drizzle the prepared dressing over the salad. Mix everything thoroughly to ensure even coating. Adjust the seasoning with salt or lemon juice, if necessary.
