Kale, farro, and sweet potato salad with pomegranate dressing

Ingredients:

  • 1 bunch Fresh Kale
  • 1 Medium Sweet Potato
  • 0.5 Sweet Onion
  • 1 cup Farro
  • 1 Pomegranate (Seeded)
  • 1 tablespoon Olive Oil
  • 1 teaspoon Lemon Juice
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions:

  1. Cut the sweet potato (with or without peeling) into small cubes measuring 1/2 inch and bake at 200 °Cor 30-40 minutes or until soft when pierced with a fork.
  2. Boil a medium saucepan of water and cook the farro until it is cooked. Drain and set aside.
  3. Chop the onion and cook with olive oil, salt, and pepper in a skillet over medium heat until golden brown. Set aside.
  4. Make the dressing by mixing olive oil, salt, pepper, and pomegranate seeds in a bowl until well combined.
  5. Chop the kale into small pieces. Place in the oven with the sweet potatoes during the last few minutes of cooking, or until the kale is warmed and slightly crispy.
  6. Once the sweet potato has finished roasting, mix it with the kale, farro, and onion. Serve and gently mix with the dressing. Enjoy!
