Kale, farro, and sweet potato salad with pomegranate dressing

Ingredients:
- 1 bunch Fresh Kale
- 1 Medium Sweet Potato
- 0.5 Sweet Onion
- 1 cup Farro
- 1 Pomegranate (Seeded)
- 1 tablespoon Olive Oil
- 1 teaspoon Lemon Juice
- 1 pinch Salt
- 1 pinch Pepper
Instructions:
- Cut the sweet potato (with or without peeling) into small cubes measuring 1/2 inch and bake at 200 °Cor 30-40 minutes or until soft when pierced with a fork.
- Boil a medium saucepan of water and cook the farro until it is cooked. Drain and set aside.
- Chop the onion and cook with olive oil, salt, and pepper in a skillet over medium heat until golden brown. Set aside.
- Make the dressing by mixing olive oil, salt, pepper, and pomegranate seeds in a bowl until well combined.
- Chop the kale into small pieces. Place in the oven with the sweet potatoes during the last few minutes of cooking, or until the kale is warmed and slightly crispy.
- Once the sweet potato has finished roasting, mix it with the kale, farro, and onion. Serve and gently mix with the dressing. Enjoy!
