Kale citrus salad

Ingredients:
- 1 bunch kale, leaves torn off the stalks
- 1/4 cup orange juice
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1 clove garlic, pressed or grated
- Salt and freshly ground black pepper
- 1 heaping tablespoon sour cream or plain Greek yogurt
- 3 tangerines, mandarins or clementines (or 1 orange), peeled and cut into chunks
- 1 jalapeno, seeded and sliced very thin
- 110g goat cheese (chevre)
Instructions:
- Take the kale leaves and cut them into thin slices using a sharp knife. Continue until you have a large pile of finely shredded kale.For the dressing, mix together orange juice, olive oil, sugar, garlic, salt, and pepper in a small jar. Shake well until mixed, then add sour cream or yogurt and shake again until the mixture is smooth and creamy.Mix the shredded kale with half of the dressing for about a minute, then add the citrus pieces and jalapeno slices. Mix again until everything is well combined. If needed, add more dressing. (Extra dressing can be kept in the refrigerator and used for other salads.)Just before serving, crumble the goat cheese into pieces using a fork and mix it into the salad. Enjoy your meal!
