Kale, carrot & apple salad

Ingredients:
- 2 bunches kale
- ½ cup freshly grated Parmesan cheese
- ⅓ cup extra-virgin olive oil
- ¼ cup lemon juice
- 3 large cloves garlic, minced
- 1 tablespoon reduced-sodium soy sauce
- 1 minced anchovy fillet or 1/2 teaspoon anchovy paste (optional)
- ½ teaspoon freshly ground pepper
- ¼ teaspoon salt
Instructions:
- Remove the stems from the kale leaves and throw them away. Rinse and pat dry the leaves. Rip the leaves into small pieces and put them in a big bowl. Include Parmesan cheese, olive oil, lemon juice, minced garlic, soy sauce, anchovy paste (if preferred), black pepper, and salt. Using your hands, gently squeeze and rub the greens to incorporate the flavors. Stop when the greens shrink by approximately half in volume. They should appear slightly darker and glossy. Sample the dish and modify the seasonings by adding more Parmesan, lemon juice, garlic, soy sauce, and/or pepper, as needed.
