Kale caesar salad

Ingredients:
- 6 cloves garlic, mashed and minced
- 1 tablespoon vinegar
- 1 tablespoon dijon mustard
- 2 tablespoon mayonnaise
- 1/2 cup olive oil
- 2 lemons juice and zest
- 4 minced anchovy fillets
- salt and pepper to taste
- 1 baguette
- 4 tablespoon butter
- 2 garlic powder
- 2 teaspoon garlic powder
- 2 tablespoon fresh oregano, chopped
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 1 bunch of kale, washed and chopped
- 2 tablespoon olive oil
- 2 heads of roasted garlic
- salt and pepper, to taste
- freshly grated parmesan (optional)
Instructions:
- Mix together minced garlic, Dijon mustard, vinegar, and a couple of pinches of salt in a food processor until well combined. Incorporate mayonnaise and blend until a thick sauce forms. Gradually pour olive oil through the opening in the processor's lid. Transfer the dressing into a bowl using a spatula and adjust the seasoning with salt, pepper, and lemon juice to your liking. For a richer flavor, consider adding anchovy to the dressing.
- Cube a baguette and place the pieces in a bowl. Heat butter in a pan and season it with garlic powder, oregano, and pepper. Toss the bread cubes in the seasoned butter until coated evenly. Bake them in an oven preheated to 200 °C for about 10 minutes or until they turn golden brown. Let them cool down after baking.
- Prepare roasted garlic by cooking 2 whole garlic heads. Clean and pat dry kale leaves. Heat oil in a large frying pan, then take it off the heat and stir in the roasted garlic and kale. Season the mixture, transfer it to a big bowl, and set it aside. Just before serving, combine the kale with the prepared croutons and dressing. Sprinkle some freshly grated Parmesan cheese on top.
