Kale caesar salad

Ingredients:

  • 6 cloves garlic, mashed and minced
  • 1 tablespoon vinegar
  • 1 tablespoon dijon mustard
  • 2 tablespoon mayonnaise
  • 1/2 cup olive oil
  • 2 lemons juice and zest
  • 4 minced anchovy fillets
  • salt and pepper to taste
  • 1 baguette
  • 4 tablespoon butter
  • 2 garlic powder
  • 2 teaspoon garlic powder
  • 2 tablespoon fresh oregano, chopped
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1 bunch of kale, washed and chopped
  • 2 tablespoon olive oil
  • 2 heads of roasted garlic
  • salt and pepper, to taste
  • freshly grated parmesan (optional)

Instructions:

  1. Mix together minced garlic, Dijon mustard, vinegar, and a couple of pinches of salt in a food processor until well combined. Incorporate mayonnaise and blend until a thick sauce forms. Gradually pour olive oil through the opening in the processor's lid. Transfer the dressing into a bowl using a spatula and adjust the seasoning with salt, pepper, and lemon juice to your liking. For a richer flavor, consider adding anchovy to the dressing.
  2. Cube a baguette and place the pieces in a bowl. Heat butter in a pan and season it with garlic powder, oregano, and pepper. Toss the bread cubes in the seasoned butter until coated evenly. Bake them in an oven preheated to 200 °C for about 10 minutes or until they turn golden brown. Let them cool down after baking.
  3. Prepare roasted garlic by cooking 2 whole garlic heads. Clean and pat dry kale leaves. Heat oil in a large frying pan, then take it off the heat and stir in the roasted garlic and kale. Season the mixture, transfer it to a big bowl, and set it aside. Just before serving, combine the kale with the prepared croutons and dressing. Sprinkle some freshly grated Parmesan cheese on top.
