Ingredients:

  • 30g drained capers (about 1 tablespoon)
  • 3 cloves garlic
  • 1 teaspoon kosher salt
  • 2 tablespoons Dijon mustard
  • 3/4 cup mayonnaise
  • 1 tablespoon toasted sesame oil
  • 1/8 to 1/4 teaspoon cayenne pepper, depending on how spicy you like it
  • Small pinch ground cloves
  • 1 lemon, juiced (about 3 tablespoons)
  • Freshly ground black pepper
  • 1 1/2 bunches kale, stemmed and torn into bite-size pieces
  • 1 cup croutons
  • 1/4 cup shaved Parmesan

Instructions:

  1. To prepare the dressing: Finely chop the capers and garlic; sprinkle with salt and crush into a smooth paste using the flat side of a knife. Transfer the paste to a medium-sized mixing bowl, then add the mustard, mayonnaise, sesame oil, cayenne, and ground cloves. Whisk the ingredients together until well combined. Mix in lemon juice and season with pepper to your liking.
  2. To assemble the salad: Toss together the kale and 1 cup of the prepared dressing in a large bowl until the kale is evenly coated. Allow the salad to marinate in the refrigerator for approximately 30 minutes to soften the kale leaves.
  3. Just before serving, garnish the salad with croutons and thinly shaved Parmesan cheese. If the kale appears too dry, drizzle with additional dressing as required. Serve promptly, and offer the remaining dressing on the side.
