Kale caesar salad

Ingredients:

  • 450g (about 2 bunches) Tuscan kale
  • 1 cup grated Parmesan 
  • 1/2 cup mayonnaise 
  • 3 tablespoons olive oil 
  • 1 tablespoon Worcestershire sauce 
  • 3 cloves garlic, grated 
  • 2 anchovy filets 
  • Zest and juice of 1 lemon 
  • Kosher salt and freshly cracked black pepper 

Instructions:

  1. Remove the stems from the kale and thinly slice it into ribbons. Rinse and pat dry, then place in a spacious bowl.
  2. Mix together the Parmesan cheese, mayo, olive oil, Worcestershire sauce, minced garlic, anchovies, lemon zest, and lemon juice in a generous bowl, and blend until the mixture is even. Taste the dressing, then season with salt and pepper as required. Drizzle the dressing over the prepared kale and mix until the kale is well coated. Serve right away or chill for a maximum of 3 hours.
