Kale bread salad with lemon poppy seed vinaigrette

Ingredients:

  • 4 cups kale
  • 2 cups croutons
  • 1/3 cup roasted, salted sunflower seeds
  • 1/4 cup pomegranate seeds
  • Poppy seed vinaigrette
  • 4 tablespoons olive oil
  • 2 tablespoons rice vinegar
  • 1 teaspoon honey
  • 1 teaspoon mayonnaise
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1 tablespoon poppy seeds

Instructions:

  1. Combine all the components for the dressing by whisking them together and leave it aside.
  2. Dice the kale finely and place it in a bowl with the prepared dressing. Allow it to absorb some of the dressing prior to incorporating the remaining components. This should take around 10 minutes. The kale will reduce in size slightly as it absorbs the dressing. If you are short on time, you can avoid this step.
