Kale blt salad

Ingredients:
- preserved lemon, chopped
- cup crème fraîche
- cup mayonnaise
- tablespoon white wine vinegar
- Kosher salt, freshly ground pepper
- tablespoon vegetable oil
- ounces slab bacon, sliced ¾ inch thick
- cups chopped Tuscan kale
- pint grape tomatoes, halved
Instructions:
- Blend preserved lemon, crème fraîche, mayonnaise, and vinegar in a food processor until well combined; season the dressing with salt and pepper. Cover and refrigerate until needed.
- Warm oil in a large skillet over medium-high heat and cook bacon, flipping halfway through, until golden brown and crispy, for 8–10 minutes on each side. Place on paper towels and allow to cool slightly. Cut into 12 pieces widthwise.
- Mix kale and the prepared dressing in a large bowl until the kale is evenly coated; allow it to sit for 5 minutes.
- Combine tomatoes and gently mix to coat them. Distribute the salad among plates and place 3 bacon pieces on top of each serving.
- Preparation Tip: You can make the dressing a day in advance. Store it in the refrigerator.
