Kale-apple salad with parmesan chips and tahini dressing
Delight your taste buds with this refreshing kale-apple salad. Crispy parmesan chips add a savory crunch, while the creamy tahini dressing ties it all together. Bursting with flavors and textures!
Ingredients:
- 3/4 cup Grated Parmesan cheese
- 1 bunch Lacinato kale, stemmed, shredded
- Sea salt
- 1 Large tart apple, cored, thinly sliced into halfmoons
- 1/4 cup Tahini
- 1 Small garlic clove, finely minced
- 2 tablespoons Lemon juice
- 2 tablespoons Water
- Pinch of black pepper
Instructions:
- Preheat the oven to 375F. Line a baking sheet with parchment paper, then place spoonfuls of Parmesan cheese about 2 inches apart. Gently press down on each spoonful to create circular shapes. Bake until the cheese is melted and the edges of the chips turn golden brown, which should take about 8-10 minutes. Take them out of the oven and let them cool down.
- At the same time, put the kale in a large bowl and sprinkle a pinch of sea salt over it. Use your hands to massage the kale (similar to kneading bread) until it starts to soften and wilt slightly, approximately 2 minutes.
- Crush the Parmesan chips into small pieces and mix them with the kale and apple.
- In a small bowl, combine tahini, minced garlic, lemon juice, water, 1/4 teaspoon of salt, and black pepper. Taste the mixture and adjust the seasoning with more salt or lemon juice if necessary. If the dressing is too thick, add another tablespoon of water.
- Gently toss the salad with just enough dressing to lightly coat the ingredients. Serve immediately.
