Kale, apple and cranberry salad
Indulge in a flavorful combination of fresh kale, crisp apple, and tangy cranberries in this vibrant salad bursting with a medley of tastes and textures.
Ingredients:
- 5 - 6 large stems of organic red kale
- 1/2 cup dried, sweetened cranberries
- 1 organic apple
- 60g cranberry-cinnamon goat cheese (or plain)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon raspberry balsamic vinegar
- 1.5 teaspoons sugar
- 1 pinch fine salt
Instructions:
- To make the dressing, put all the dressing ingredients into a glass jar with a lid. Close the lid tightly and shake vigorously until they are mixed well. Keep aside.
- Separate the kale leaves from the thick center stem. Wash them thoroughly and dry them by spinning. Finely chop the kale and put it in a bowl. Mix in the cranberries and half of the prepared dressing. Toss properly. Quarter the apple, discard the core, and thinly slice the quarters. Arrange the apple slices along the edge of the bowl over the kale. Crumble the goat cheese and sprinkle it in the center on top of the kale. Finally, drizzle the remaining dressing over the salad.
