Kale and quinoa salad

Ingredients:

  • 2 bunches fresh kale cut into 1/4in chiffonade
  • 1 cup cooked corn
  • 1/2 red onion cut into strips
  • 1 cup quinoa cooked
  • 4 tablespoons olive oil
  • 1 medium lemon juiced and zest
  • 2 tablespoons honey
  • 1 poached egg if desired
  • 1 cup diced ham if desired
  • salt and pepper to taste

Instructions:

  1. Mix all components by hand until thoroughly covered and taste to make sure the seasoning is to your liking.
  2. It can be stored in the fridge for 3-5 days and will retain its crispiness and freshness unlike most other salads.
