Joey's garlic kauai shrimp

- 30g sweet chili sauce
- 30g fish sauce
- 30g cane vinegar

- 1 carrot, shredded
- 30g salt
- 2 tablespoons salad oil
- Ten 13/15 Kauai shrimp, deveined
- 1 tablespoon minced garlic
- 30g butter
- 2 fresh basil leaves
- Pinch salt and pepper
Instructions:
- To prepare the kalamansi fish sauce: Combine kalamansi juice, chili sauce, fish sauce, vinegar, minced garlic, sugar, and chopped cilantro in a mixing bowl until thoroughly combined.
- To make the green papaya atchara salad: Mix together shredded papaya, carrots, and salt in a bowl, allowing it to soften for approximately 5 minutes. Rinse under running water to remove excess salt. Squeeze out any remaining liquid and transfer to a separate bowl. Pour in 3 ounces of the prepared kalamansi fish sauce. Refrigerate and let it marinate for three days before serving.
- For the garlic Kauai shrimp: Begin by heating a skillet over medium-high heat and add oil. Cook the shrimp on both sides until golden brown. Stir in minced garlic, butter, and fresh basil, cooking until the garlic turns golden. Drizzle 2 tablespoons of the kalamansi fish sauce over the shrimp to create a glaze. Season with salt and pepper to taste.
