Jerk-ish pork skewers

Delicious and savory jerk-ish pork skewers bursting with flavorful Caribbean spices and grilled to perfection. Perfect for a summer cookout or BBQ.

Ingredients:

  • 500g pork mince (at least 10% fat)
  • 2 tsp allspice berries, ground using a pestle and mortar
  • 1 tsp ground cinnamon
  • 2 tsp thyme leaves
  • 2 spring onions, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 lime, zested and cut into quarters
  • 2 tsp molasses or honey
  • 2 tbsp olive oil
  • rice salad, to serve (optional)
  • 8 wooden skewers, soaked in water for at least 2 hrs

Instructions:

  1. Combine the ground pork in a bowl with allspice, cinnamon, thyme, green onions, minced garlic, lime zest, and molasses or honey using your hands. Pour olive oil over a large plate.
  2. Shape the minced mixture into eight equal portions and form them into balls. Take one ball at a time, dampen your hands, and mold the ball around a skewer to create a sausage shape. Place the assembled skewers on the oiled plate and refrigerate until ready to use. Store in the refrigerator for up to one day.
  3. Start the barbecue and wait until the charcoals are covered with ash. Place the skewers on the grill and cook for 2 minutes without moving them. Carefully flip using tongs and cook for an additional 5 minutes before flipping once more. Repeat until the skewers are thoroughly cooked and browned.
  4. Transfer the skewers to a serving platter, squeeze lime wedges over them, season with salt and pepper, and serve with a side of rice salad, such as a mix of cooked rice, sweetcorn, red onion, and herbs.
