Jerk chicken salad
Indulge in the exotic flavors of our zesty jerk chicken salad! A fusion of savory spices and fresh greens that will tantalize your taste buds.
Ingredients:
- 6 small chicken breasts (1 1/3 lbs.)
- 2 tbsp. dry Jamaican jerk seasoning
- 2 garlic cloves, minced
- 2 tbsp. olive oil
- Juice of 1 lemon
- 3 corn on the cob
- 1 small ripe avocado
- 4 little Boston lettuces, quartered
- 2 celery stalks, chopped
- 7 oz. cherry tomatoes
- Small bunch cilantro
- 2 tbsp. light salad dressing
Instructions:
- Season the chicken breasts by adding salt, ground black pepper, jerk seasoning, garlic, 2 tablespoons of olive oil, and lemon juice. Let it sit in the refrigerator for 2 hours.
- Preheat the oven to 400˚F or prepare a grill until the coals turn white.
- Coat the corn with oil. Roast the chicken and corn in the oven for 20 minutes, or grill for 15 minutes, flipping occasionally.
- While waiting, cut the avocado into quarters, peel, and slice. Use a knife to remove the roasted corn kernels from the cob.
- Arrange the lettuce, celery, tomatoes, avocado, chicken, corn, and cilantro leaves in a bowl. Drizzle with the dressing before serving.
