Ingredients:
- 4 (5-ounce) salmon fillets

- 1/4 cup soy sauce
- 1/4 cup sake or dry white wine
- 1/4 cup mirin

- 3 tablespoons chopped fresh ginger
- 1 small lemon, thinly sliced

Instructions:
- This technique is suitable for fresh halibut or sea bass as well. You can enjoy the cooked fish either warm or at room temperature, either as the main dish or as part of a salad. If you choose to use salmon, consider marinating and grilling the skin separately to create a decorative touch.
- Sprinkle salt over the salmon and set it aside.
- In a small saucepan, mix all marinade ingredients, excluding the lemon slices, and bring them to a boil. Once boiled, remove from heat and let it cool to room temperature. Then, add the lemon slices and pour the cooled marinade over the fish. Marinate the fish in the refrigerator for 2 to 4 hours, remembering to turn it occasionally.
- When ready to serve: Grill or broil the fish on both sides until it is just cooked, which usually takes about 4 to 5 minutes per side. Make sure not to cook it for too long. The salmon should still appear slightly translucent in the middle. Accompany the dish with a side of Soba Noodle Salad.
