Japanese potato salad

Ingredients:
- 1 potato(8oz.)
- 1 1/2 TBSP. rice vinegar*
- 1/2 TBSP. brown sugar
- 3 TBSP. Kewpie Mayonnaise**
- 1 stalk celery
- 2 slices of your favorite ham
- 2 tbsp carrot, finely chopped
- 1 TBSP. Parsley, finely chopped
- White pepper to taste
Instructions:
- Wash the potato under running water. Place it in a microwave-safe glass dish while still damp. Cover with a microwave-safe lid or plastic wrap and microwave for 7-8 minutes. Remove the skin using paper towels while the potato is still warm.
- In a medium bowl, mash the potato gently with a masher or fork, ensuring some chunks remain. Mix in sugar, salt, and vinegar. Then, incorporate kewpie Mayonnaise, stirring well. Allow it to cool to room temperature.
- {While waiting, prepare the vegetables} Peel and thinly slice the celery. Sprinkle some salt over the celery to remove excess moisture. Let sit for 5 minutes. Cut the ham into 1/2-inch cubes.
- Press the excess water out of the celery and combine it with the potato mixture. Add the remaining vegetables and ham, stirring gently. Season with pepper.
