Japanese cucumber salad

Ingredients:

  • 2 medium cucumbers, or 1 large English cucumber
  • ¼ cup rice vinegar
  • 1 teaspoon sugar
  • ¼ teaspoon salt
  • 2 tablespoons sesame seeds, toasted (see Tip)

Instructions:

  1. Remove the outer skin of the cucumbers, leaving every other green stripe. Cut the cucumbers in half vertically and remove the seeds with a spoon. Use a sharp knife or a wide peeler to slice them thinly. Put them in between two paper towels and press gently to get rid of any extra liquid.
  2. Mix vinegar, sugar, and salt in a medium bowl until everything dissolves. Then, add the cucumbers and sesame seeds; mix well. Serve right away.
