Japanese cucumber salad

Ingredients:
- 2 medium cucumbers, or 1 large English cucumber
- ¼ cup rice vinegar
- 1 teaspoon sugar
- ¼ teaspoon salt
- 2 tablespoons sesame seeds, toasted (see Tip)
Instructions:
- Remove the outer skin of the cucumbers, leaving every other green stripe. Cut the cucumbers in half vertically and remove the seeds with a spoon. Use a sharp knife or a wide peeler to slice them thinly. Put them in between two paper towels and press gently to get rid of any extra liquid.
- Mix vinegar, sugar, and salt in a medium bowl until everything dissolves. Then, add the cucumbers and sesame seeds; mix well. Serve right away.
