Italian tortellini salad

Ingredients:
- 19 oz. bag frozen tortellini
- 1 sweet bell pepper (chopped)
- Half of a 170g jar of pitted ripe olives
- Half of a 340g jar of artichoke hearts (roughly chopped)
- 140g cherry tomatoes (halved)
- 110g cappicola ham (chopped)
- 110g Genoa salami (chopped)
- 230g smoked provolone cheese (chopped)
- Large handful fresh basil (torn into small pieces)
- 1 teaspoon dijon mustard
- ¼ cup red wine vinegar
- 1 clove garlic
- ½ teaspoon salt
- ½ teaspoon fresh ground pepper
- ½ cup olive oil
Instructions:
- Prepare tortellini in a large saucepan following the instructions on the package. Once cooked, drain and rinse the tortellini with cold water to lower its temperature and prevent further cooking.
- Mix tortellini, bell pepper, olives, tomatoes, ham, salami, cheese, and basil in a large mixing bowl.
- In a small container with a tight lid, mix mustard, vinegar, minced garlic, salt, pepper, and olive oil. Cover the container and shake vigorously for about a minute until all ingredients are mixed well.
- Drizzle the dressing over the tortellini mixture and stir gently to blend. Refrigerate until serving time. Add extra basil on top for decoration, if preferred.
