Italian-style potato salad with swiss chard

Delight in the flavors of Italy with this unique potato salad featuring tender swiss chard leaves, tossed in a zesty dressing for an unforgettable culinary experience.

Ingredients:

  • 4 large yellow potatoes
  • 1 small bunch of Swiss chard
  • 1/2 cup roughly chopped white onion
  • 1 garlic clove (minced)
  • 1 tablespoon vinegar
  • 1/3 cup light olive oil
  • 1 1/2 teaspoons red pepper flakes
  • 1 teaspoon coarse salt

Instructions:

  1. Heat up a large pot of water until it boils.
  2. Dice the potatoes (keeping the skin) into pieces measuring 1 1/2 to 2 inches. Place them in the boiling water and cook until they are soft but still slightly firm. Once ready, drain the water thoroughly.
  3. Rip the Swiss chard, including the stems, into large pieces. Cook them in the boiling water for 3 to 4 minutes. Then, empty the contents into a colander to let it drain.
  4. Mix the cooked potatoes, Swiss chard, and onion in a large bowl.
  5. In a separate small bowl, blend together minced garlic, vinegar, oil, and crushed red pepper. Drizzle the mixture over the potato combination and mix gently. Sprinkle some salt, mix again. Store in the refrigerator until it is cold.
