Italian sausage salad

Ingredients:

  • 1/3 cup red wine vinegar
  • 1/3 cup canola oil
  • 1 teaspoon dried oregano, preferably Mexican
  • 1 teaspoon sugar
  • 1 teaspoon garlic powder
  • Pinch of crushed red pepper
  • Kosher salt
  • Freshly ground black pepper
  • 2 medium carrots, thinly sliced
  • 1 large seedless cucumber, cut into 1/2-inch chunks
  • 450g hot or sweet Italian sausages
  • 1 small head of iceberg lettuce, chopped (8 cups)
  • 16 peperoncini—stemmed, seeded and sliced (1 cup)

Instructions:

  1. Heat up a grill pan. Combine vinegar, oil, oregano, sugar, garlic powder, red pepper, salt, and black pepper in a large bowl. Add in the carrots and cucumber, mix well, and marinate for at least half an hour.
  2. While waiting, cook the sausages on the grill over low heat for approximately 30 minutes until they are well-cooked and slightly charred. Remove from heat, chop into 1-inch pieces on a cutting board.
  3. Mix the marinated vegetables, lettuce, peperoncini, and sausage together. Season with salt and pepper to taste before serving.
