Italian pizzeria salad

Indulge in the flavors of Italy with this fresh pizzeria salad. Bursting with a medley of colorful veggies and zesty dressing, it's a culinary delight!

Ingredients:

  • 1/2 cup red wine vinegar
  • 1/3 cup extra-virgin olive oil 
  • 1 tablespoon minced shallot 
  • 1 teaspoon honey 
  • 1/2 teaspoon Dijon mustard 
  • 1/4 teaspoon kosher salt 
  • Pinch crushed red pepper 
  • 340g marinated artichoke quarters, drained and halved lengthwise
  • 300g cherry tomatoes, halved 
  • 230g ciliegine mozzarella (cherry-size mozzarella balls), halved 
  • 170g pitted medium black olives, drained 
  • 1 head romaine lettuce, quartered lengthwise and sliced into 1/2-inch pieces 
  • 140g spring mix lettuce 
  • 2 tablespoons chopped fresh basil 
  • 1 tablespoon chopped fresh oregano (see Cook's Note)
  • Kosher salt

Instructions:

  1. To prepare the vinaigrette: Mix together the vinegar, oil, shallot, honey, mustard, salt, and crushed red pepper in a jar. Close the lid tightly and shake well until the ingredients are fully combined. Chill in the fridge until you're ready to use it.
  2. For the salad: Put together the artichokes, tomatoes, mozzarella, and olives in a mixing bowl. Drizzle 1/3 cup of the prepared vinaigrette over the salad ingredients. Allow it to soak in the flavors by marinating in the refrigerator for at least 20 minutes or up to 1 hour.
  3. When it's time to serve, introduce the romaine, spring mix, basil, and oregano to the salad and sprinkle with some salt. Serve right away.
