Italian celery and mushroom salad

Ingredients:

  • 7 tablespoons Extra Virgin Olive Oil, divided
  • 450g mushrooms, delicate varieties such as cremini, oyster, or shiitake are best, wiped clean as sliced as thin as possible
  • 2 tablespoons fresh lemon juice
  • 8 ribs celery, shaved paper thin (use a mandolin if you have one)
  • 1 cup shaved parmigiano reggiano cheese
  • sea salt and freshly ground black pepper, to taste
  • 1/4 cup chopped Italian flat-leaf parsley

Instructions:

  1. COOK THE MUSHROOMS: Heat 3 tablespoons of olive oil in a skillet over medium-high heat. Once the oil is heated, add the sliced mushrooms and cook until they turn golden brown, which should take about 5-6 minutes. Sprinkle a bit of salt and pepper, then remove from heat and let them cool down.
  2. PREPARE THE SALAD: In a large bowl, mix the remaining 4 tablespoons of olive oil with lemon juice. Season with salt and pepper to your liking. Adjust the taste by adding more oil or lemon juice if needed. Incorporate celery, the cooled mushrooms, cheese, and parsley into the bowl and mix well. Finish it off by seasoning with sea salt and pepper before serving.
