Irene's winter salad

Indulge in the fresh flavors of Irene's Winter Salad, featuring crisp greens, seasonal vegetables, tangy vinaigrette, and a burst of citrus. Perfect for a cozy meal!

Ingredients:

  • 4 cups bite-size broccoli florets
  • 4 cups bite-size cauliflower florets
  • ½ cup water
  • ⅓ cup lemon juice
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon sugar
  • ½ teaspoon salt
  • ½ cup quartered pitted Kalamata olives
  • ¼ cup chopped soft sun-dried tomatoes (see Tip)

Instructions:

  1. Place the broccoli and cauliflower along with some water in a large microwave-safe bowl. Cover it and microwave on High until they are just tender, for approximately 4 minutes. (You can also steam them over 1 inch of boiling water in a large saucepan with a steamer basket until they are just tender, about 4 minutes.) Once done, drain the vegetables.
  2. In a separate large bowl, combine lemon juice, oil, garlic powder, oregano, sugar, and salt. Then, add the cooked vegetables and mix well. Allow it to marinate in the fridge for about 20 minutes, stirring occasionally.
  3. Add olives and tomatoes to the mixture. Serve the dish and drizzle any remaining dressing from the bowl on top.
