Indian street corn salad

Tantalize your taste buds with this vibrant Indian street corn salad bursting with flavorful spices and zesty citrus notes. Perfect for a refreshing culinary experience!

Ingredients:

  • 3 large ears corn, husks and silk removed
  • Olive oil
  • 1/4 cup freshly squeezed lime juice
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon cayenne pepper
  • Big pinch ground cardamom
  • Big pinch chaat masala
  • Salt and freshly ground black pepper
  • 1 cup halved cherry or sugarplum tomatoes 
  • 1 or 2 sprigs fresh mint, leaves thinly sliced
  • Small handful fresh cilantro, leaves and soft stems rustically ripped into bite-size pieces

Instructions:

  1. Heat a large cast-iron skillet over medium-high heat until it starts to smoke. Coat the corn with olive oil, then gently place it into the skillet. Grill until charred in spots all around and has a golden brown color, about 20 to 25 minutes, flipping every 5 minutes. Take it out and let it cool.
  2. To make the dressing: In the meantime, mix together the lime juice, cumin, cayenne, cardamom, chaat masala, salt, and pepper to taste. Cut the corn kernels off the cobs and put them in a large bowl. Add the tomatoes, mint, and cilantro. Mix with the dressing and adjust the seasoning as needed. Ready to serve!
