Indian corn and coconut salad

Ingredients:
- 6 fresh ears of corn
- 1 and 1/2 Tbs coconut oil
- 1/2 tsp cumin seeds
- 1/8 tsp turmeric powder
- 1/2 tsp salt
- 1/2 tsp sugar
- 1/4 tsp ground cumin
- 1/8 tsp cayenne
- 1/2 tsp lemon juice
- 1/2 cup fresh grated coconut or dried grated unsweetened (fresh is best if you can get it)
Instructions:
- Peel off and rinse the corn on the cob.
- Remove the corn kernels from the cob.
- Take half of the kernels and grind them in a blender without adding water.
- Grind until a smooth batter is formed.
- Combine the ground corn with the remaining whole kernels.
- Heat coconut oil in a skillet or wok.
- Once the oil is hot, add the cumin seeds.
- When the cumin seeds start crackling and changing color, add the corn mixture and turmeric powder.
- Thoroughly mix the ingredients.
- Cover the pan, reduce the heat, and cook for approximately 10 minutes, stirring occasionally to prevent sticking.
- After 10 minutes, uncover the pan and add sugar, salt, ground cumin, cayenne pepper, and lemon juice.
- Mix well, cover the pan, and cook for another 4 minutes.
- Uncover the pan, add coconut, stir, and it's ready to be served at room temperature.
