Hot honey corn salad is the perfect summer side

Savor the flavors of summer with this zesty hot honey corn salad. The combination of sweet corn, tangy dressing, and spicy honey will tantalize your taste buds. Ideal for BBQs or picnics.

Ingredients:

  • 1 ½ tablespoons cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon ground pepper, divided
  • 3 tablespoons extra-virgin olive oil
  • 3 cups fresh corn kernels (from 3 medium ears)
  • 1 cup chopped bell pepper (any color)
  • ⅓ cup finely chopped red onion
  • ¼ cup finely chopped fresh cilantro, plus torn cilantro leaves for garnish
  • ¼ cup crumbled feta cheese
  • 4 cups mixed salad greens

Instructions:

  1. Mix together vinegar, honey, mustard, salt, cayenne, and 1/8 teaspoon of pepper in a small bowl. Slowly pour in oil while whisking continuously until the mixture is smooth and well combined.
  2. Combine corn, bell pepper, onion, cilantro, and feta in a large bowl. Pour 1/4 cup of the prepared dressing over the mixture and mix well.
  3. Divide 1 cup of greens into 4 shallow bowls. Drizzle the remaining dressing evenly over the greens. Spoon about 3/4 cup of the corn salad into each bowl and sprinkle with the remaining 1/8 teaspoon of pepper. Optionally, decorate with cilantro leaves.
