Ingredients:

  • 910g white-skinned waxy potatoes, scrubbed (about 5 large)
  • Kosher salt
  • 6 slices bacon (about 110g)
  • 1 small yellow onion, diced
  • 3/4 cup chicken broth
  • 3 tablespoons white wine vinegar
  • 2 tablespoons whole-grain mustard
  • 2 teaspoons sugar
  • 1/4 cup chopped fresh flat-leaf parsley
  • Freshly ground pepper

Instructions:

  1. 1. Place the potatoes in a large saucepan. Add 2 tablespoons of salt and sufficient cold water to cover by 1 inch. Bring to a boil, reduce the heat, and cook until easily pierced with a fork, which takes around 30 minutes. Drain and let them cool a bit.
  2. 2. As the potatoes are nearing readiness, fry the bacon in a frying pan over medium-high heat until it becomes crispy, which usually takes 4 minutes. Place the cooked bacon on a plate lined with paper towels to absorb excess oil. Lower the heat to medium, add the onion and 2 teaspoons of salt, and sauté until the onion turns translucent, approximately 8 minutes, stirring occasionally. Stir in the broth, wine, vinegar, mustard, and sugar and cook until slightly thickened, roughly 5 minutes.
