Hot and sour shredded salad

Indulge in the zesty flavors of hot and sour shredded salad, packed with vibrant ingredients that will tantalize your taste buds.

Ingredients:

  • 3 carrots
  • 4 scallions
  • 1 long red chile
  • 1 long green chile
  • Small bunch cilantro
  • Juice of 1 lime
  • 1/4 cup Thai fish sauce
  • 1 teaspoon superfine sugar

Instructions:

  1. Even though I can't resist snacking on this straight out of the fridge if there are any leftovers, I highly recommend preparing this dish right before serving.
  2. Start by peeling and slicing the carrots into long strips, then cutting them into thin matchstick-shaped pieces. Trim and halve the scallions before slicing them into similar thin strips. Remove the seeds from the chillies and slice them thinly, followed by finely chopping the cilantro. Combine all the sliced vegetables and cilantro in a bowl. In a separate bowl, mix lime juice, fish sauce, and caster sugar, then toss the vegetables with this dressing.
