Horseradish potato salad

Delight your taste buds with the zesty kick of horseradish in this potato salad. A perfect balance of flavors that will elevate any meal.

Ingredients:

  • 910g white boiling potatoes, peeled and cut into 3/4-inch pieces
  • Kosher salt and freshly ground black pepper 
  • 1/3 cup mayonnaise 
  • 3 tablespoons prepared horseradish 
  • 2 tablespoons Dijon mustard 
  • 1 tablespoon distilled white vinegar 
  • 1/4 teaspoon celery salt 
  • 1/8 teaspoon cayenne 
  • 3 stalks celery, chopped, plus 1 tablespoon chopped leaves 
  • 1 large shallot, finely chopped 
  • 2 tablespoons chopped fresh flat-leaf parsley 
  • 2 hard-boiled eggs, chopped 

Instructions:

  1. Place the potatoes and 2 teaspoons of salt into a large pot and add enough cold water to cover them by approximately 2 inches. Heat over a high flame until it starts boiling, then lower the heat and let it simmer until the potatoes are soft but still firm, which should take around 5 minutes. Drain the water from the pot.
  2. In the meantime, mix together mayonnaise, horseradish, mustard, vinegar, celery salt, and cayenne in a spacious bowl along with 1/2 teaspoon of salt and a bit of freshly ground black pepper. Add the cooked potatoes and also mix in the celery, celery leaves, and shallots. Allow it to cool down to room temperature before gently adding the parsley and eggs. Adjust the seasoning with salt and pepper to your liking. Keep it refrigerated until you are ready to serve.
