Honey-mustard-egg salad buns

Delight in the savory fusion of honey-mustard dressing drizzled over hard-boiled eggs in a fluffy bun. A burst of flavors in every bite!

Ingredients:

  • ½ ripe avocado
  • 1 ½ teaspoons lemon juice
  • 1 teaspoon avocado oil
  • 3 hard-boiled eggs, chopped
  • ¼ cup finely chopped celery (about 1 stalk)
  • 1 tablespoon snipped fresh chives
  • ¼ teaspoon salt
  • ⅛ teaspoon ground pepper
  • 4 slices whole-wheat sandwich bread, toasted
  • 2 leaves lettuce

Instructions:

  1. Transfer the avocado pulp from one half of the avocado into a medium bowl. Combine with lemon juice and oil; crush until it reaches a mostly smooth consistency. Mix in chopped eggs, celery, chives, salt, and pepper, and blend well. Spread the mixture evenly over 2 slices of toast. Place a piece of lettuce on top of each and cover with another slice of toast.
