Holiday kale salad

Ingredients:

  • 2 bunches raw kale, ribs removed, leaves torn in two
  • 1/2 cup extra-virgin olive oil
  • 9 cloves garlic, smashed, skin removed
  • salt

Instructions:

  1. Heat 3 tablespoons of olive oil in your largest saute pan over high heat and place 3 cloves of garlic. Allow the oil to heat up quickly and let the garlic cloves turn lightly brown. Add one-third of the kale leaves and season them with kosher salt. Use kitchen tongs to flip the leaves ensuring they are all cooked evenly. Transfer the first batch to a bowl and repeat the process with the second and third batches. (For each batch, use 3 tablespoons of olive oil, 3 garlic cloves, one-third of the kale leaves, and season with salt). Keep repeating until all the kale leaves are sauteed. Serve the dish while it's warm.
