Herring & beetroot salad

Delight your taste buds with this colorful herring and beetroot salad bursting with flavors of the sea and earthy undertones. Perfect for a light and refreshing meal option.

Ingredients:

  • 2 medium potatoes, skin on
  • 3 eggs
  • 4 cooked beetroots
  • 300g herring in oil or rollmop herring, drained and soaked in milk
  • 1 onion, finely chopped
  • 150g mayonnaise
  • 1 bunch chives, chopped

Instructions:

  1. Cook the potatoes in boiling water until they are soft. Let them cool down, then remove the skin. Cook the eggs until hard-boiled, let them cool, then peel. Shred the potatoes, eggs, and beetroot using the larger side of a grater separately, and remember to wash the grater in between each ingredient.
  2. Remove the herring from the oil or the rollmop from the milk. Slice them into strips and distribute evenly among 4 individual glass bowls. Sprinkle spring onions generously over the herring, then layer with grated beetroot, a light spread of mayonnaise, cooked potatoes, more mayonnaise, and grated eggs. Top it off with another layer of mayonnaise, season with salt and pepper, and garnish with chopped chives.
