Herby cabbage salad

Ingredients:

  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar 
  • 1 tablespoon whole-grain mustard 
  • 1 small shallot, minced 
  • Kosher salt and freshly ground black pepper 
  • 1 small head Napa cabbage, halved and cut crosswise into 1/2-inch strips 
  • 1 cup fresh flat-leaf parsley leaves, chopped 
  • 2 tablespoons finely chopped fresh chives 
  • 1 tablespoon finely chopped fresh oregano 
  • 2 teaspoons finely chopped fresh thyme 

Instructions:

  1. Combine the oil, vinegar, mustard, shallots, 1/2 teaspoon of salt, and some black pepper in a spacious salad bowl. Mix in the cabbage, parsley, chives, oregano, and thyme until everything is evenly coated. Allow it to sit for at least 15 minutes or store in the refrigerator for up to 24 hours before serving.
