Herbed salad flatbread with fig, pecan vinaigrette

Try our delicious herbed salad flatbread with a delightful combination of figs, pecans, and tangy vinaigrette. A perfect harmony of flavors and textures.

Ingredients:

  • 1/2 whole grain pizza dough
  • 1/2 cup smoked blue cheese, crumbled
  • 6 dried figs, thinly sliced
  • 1 green onion, thinly sliced
  • 2 tablespoons fig jam
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • salt and pepper to taste
  • olive oil
  • 1 teaspoon aged balsamic vinegar
  • 2 handfuls mixed greens and herbs*
  • 1/2 cup toasted, ground pecans

Instructions:

  1. Preheat the oven to 260 °C.
  2. Split the dough in half, setting aside one portion for later use. Let the dough reach room temperature and roll it out until very thin.
  3. Evenly spread cheese over the dough and bake it in the oven until it turns golden brown and bubbly. Rotate it halfway through the baking process and use a brush to spread the melted oils along the edges of the dough. If the idea of warm lettuce bothers you, you can allow it to cool slightly.
  4. While the flatbread is baking, combine jam, mustard, vinegar, lemon juice, salt, and pepper in a bowl, whisking in enough olive oil to create a thick emulsion. Add pecans to the mixture. Mix greens, scallions, and figs with the dressing until thoroughly coated. Place the dressed greens and fresh black pepper on top of the pizza.
  5. * Whole Foods offers excellent herb blends, however, I prefer using parsley, tarragon, and dill for their fresh and green flavors, with a hint of arugula for some extra zest. Any combination of herbs will work well. It's also a nice addition to include some thinly sliced high-quality salumi.
