Herbed rice salad

Ingredients:

  • 3 tablespoons unsalted butter
  • 1 medium onion, diced
  • 1 cup long-grain white rice, rinsed and drained
  • 1 garlic clove, minced
  • 1 1/2 cups water
  • Kosher salt
  • 1/4 cup chopped mixed herbs, such as parsley, chives and tarragon

Instructions:

  1. In a medium saucepan, heat the butter until it melts. Then, add the onion and cook it over low heat with the pan covered until it becomes translucent, which should take around 5 minutes. After that, mix in the rice and garlic. Pour in the water and add 1 teaspoon of salt. Increase the heat to high and bring the mixture to a boil. Lower the heat to moderately low, cover the saucepan, and let it cook for 10 minutes.
  2. Instead of using the lid, cover the rice with a clean kitchen towel and remove it from the heat. Allow the rice to sit and steam for 5 minutes until it becomes tender. Gently separate the grains of rice with 2 forks. Next, add the herbs and salt, stir gently, cover the pan with the towel and the lid, and let it sit for up to 30 minutes before serving.
