Herb melon salad
Delight in the refreshing flavors of this herb melon salad, a perfect blend of fresh herbs and sweet melon, for a burst of taste in every bite.
Ingredients:
- 1/4 cup champagne vinegar
- 1/4 cup sugar
- 1/4 cantaloupe, peeled, seeded and diced into 3/4-inch pieces
- 1/4 honeydew, peeled, seeded and diced into 3/4-inch pieces
- 1/4 cup fresh basil leaves, roughly chopped
- 1/4 cup fresh mint leaves, roughly chopped
- Flake salt, such as Maldon
Instructions:
- Mix the vinegar and sugar in a small saucepan over medium heat. Heat until it starts bubbling, stirring occasionally to make sure the sugar dissolves. Take it off the heat and let it cool down.
- Place the cantaloupe and honeydew in a bowl and mix with the basil and mint. Pour the sweetened vinegar over the fruits and mix gently. Arrange the mixed fruits on a platter and sprinkle with flake salt.
