Heirloom tomato & watermelon salad

Delight in the refreshing blend of heirloom tomatoes and juicy watermelon in this vibrant and flavorful salad. Perfect for a summer feast.

Ingredients:

  • 300g heirloom tomato (a mixture of colours and sizes looks nice), halved or quartered if large
  • 0.25 large or 0.5 small watermelon
  • handful mint, leaves picked
  • 100g feta

Instructions:

  1. Place the tomatoes in a spacious bowl. Peel off the outer skin of the watermelon, dice the flesh into medium-sized pieces, and combine with the tomatoes.
  2. Chop the mint leaves coarsely, removing the stems but leaving some for decoration, and mix the remaining leaves into the bowl. Sprinkle the feta over the mixture, gently mix everything, and decorate with the saved mint.
