Ingredients:

- ¼ cup dry white wine

- 3 tablespoons lemon juice
- 1 cup unsalted chicken broth plus 1 tablespoon, divided
- 1 tablespoon chopped capers
- 1 tablespoon chopped fresh parsley
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
- 1 tablespoon cornstarch
- 2 tablespoons butter
Instructions:
- Heat oil in a medium skillet over medium-high heat. Cook the shallot until it becomes tender, stirring occasionally for approximately 1 minute. Pour in wine, along with lemon juice and zest; allow it to come to a boil. Continue cooking and stirring to loosen any browned bits from the bottom of the pan, until the liquid reduces by about half, which should take 2 to 3 minutes. Mix in 1 cup of broth, capers, parsley, salt, and pepper. Stir and cook until the sauce reduces by half, around 4 minutes.
- Combine 1 tablespoon of broth with cornstarch in a small bowl and whisk them together. Gradually pour this cornstarch mixture into the pan while whisking continuously. Keep stirring and cooking until the sauce thickens, which should take about 1 minute. Take the pan off the heat and stir in butter until it is fully melted.
