Heirloom tomato salad with fresh mozzarella, watermelon and mint

Enjoy a vibrant blend of heirloom tomatoes, creamy fresh mozzarella, juicy watermelon, and refreshing mint in this irresistible summer salad.

Ingredients:

  • 2 medium ripe tomatoes, homegrown if possible
  • 1 pinch fleur de sel
  • 3 cherry tomatoes, sliced
  • 2 tablespoons diced watermelon
  • 30g fresh mozzarella
  • 2 teaspoons finely chopped mint leaves
  • Fresh cracked black pepper, optional

Instructions:

  1. Cut one heirloom tomato into at least 3 slices. Arrange on a plate with sliced cherry tomatoes, diced watermelon, and a slice of mozzarella around it. Sprinkle some fleur de sel over the tomatoes and watermelon.
  2. Cut the other tomato in half. Put a sieve over a small bowl or cup, and extract the juice from one half of the tomato. Drizzle the tomato juice over the salad. Add mint leaves, more fleur de sel, and freshly ground black pepper (if preferred). Present and enjoy.
