Heirloom tomato salad with feta & oregano flowers
Delight in the freshness of heirloom tomatoes paired with creamy feta and fragrant oregano flowers. A culinary experience bursting with flavor.
Ingredients:
- 910g assorted ripe heirloom tomatoes
- 1 large bell pepper {any color}, seeded & cut into chunks
- kosher salt
- 1 clove garlic, minced
- 1 tablespoon minced fresh oregano
- 1 tablespoon white balsamic vinegar
- 2 tablespoons extra virgin olive oil
- 40g feta, cut into small bits, or crumbled
- oregano flowers, for garnish
Instructions:
- Start by cutting the tomatoes into medium-sized, irregular pieces. Create a mix of shapes by dicing some of them large and slicing others. Transfer them to a large sieve and sprinkle with a couple of pinches of kosher salt. Gently toss them and then add another pinch or two of salt. Allow them to rest for 15 minutes.
- Mix the minced garlic, oregano, and vinegar in a small bowl. Whisk until well combined. Gradually pour in the olive oil while whisking continuously to create a smooth mixture.
- Carefully mix the peppers and tomatoes together. Place them on a serving dish and sprinkle with the crumbled feta cheese. Pour the prepared dressing over the salad, top with oregano flowers for garnish, and serve.
