Heirloom tomato salad with feta dressing

Ingredients:

  • 2 kg (4. lb) assorted heirloom tomatoes
  • 2 teaspoons sea salt
  • ¼ teaspoon ground black pepper
  • 200 g (7 oz) feta cheese, crumbled
  • 125 ml (½ cup) extra virgin olive oil
  • 30 ml (1½ tablespoons) red wine vinegar
  • 1 clove garlic, crushed
  • 2 teaspoons dried oregano
  • 1 avocado
  • ½ red onion, halved and thinly sliced
  • Sea salt and ground black pepper

Instructions:

  1. Cut the larger tomatoes into thick slices and divide the smaller ones into halves or quarters. Arrange them on a platter, alternating colors and sizes, and drizzle with a pinch of salt and pepper.
  2. For the sauce, combine half of the feta cheese with the olive oil, vinegar, minced garlic, and oregano in a large bowl. Stir until mixed well. Season with salt and pepper according to your taste. Keep it aside.
  3. Remove the skin from the avocado, slice it, and save some for decoration. Place the sliced avocado on top of the tomatoes. Pour the sauce over the salad and garnish with the saved avocado and chopped onion. Sprinkle the remaining feta cheese on top before serving.
