Heirloom tomato & mint salad

Ingredients:
- 910g assorted vine-ripened heirloom tomatoes
- 1 shallot, thinly sliced
- Coarse sea salt and freshly ground black pepper

- 1/4 cup fresh spearmint leaves, torn into pieces
- 1/4 cup fruity extra-virgin olive oil
- 2 tablespoons champagne vinegar or white wine vinegar
Instructions:
- 1. Slice tomatoes into different sizes and shapes: thick slices; wedges; halves; and pieces.
- 2. Place tomatoes on a big plate, scatter shallot on top, and add 1 teaspoon of salt and a pinch of black pepper. Allow the tomatoes to sit until they start to release their juices, approximately 5 minutes. Add mint, pour olive oil and vinegar, and present.
