Heirloom tomato, beet & red onion salad
Delight in the vibrant flavors of heirloom tomatoes, earthy beets, and zesty red onions in this refreshing and colorful salad. Perfect for summer!
Ingredients:
- 700g heirloom tomato
- 500g cooked beetroot, cut into chunks
- 1 red onion, quartered, then sliced
- 2 tbsp wholegrain mustard
- 5 tbsp red wine vinegar
- 2 tbsp Pimm’s
- 2 tbsp clear honey
- 2 raw beetroots, very thinly sliced (on a mandolin if you have one)
Instructions:
- Keep the tiniest tomatoes whole, and slice or chop the larger ones. Place them in a bowl along with the cooked beetroot and onion. Mix the mustard, vinegar, Pimm’s, and honey with some salt and pepper. Drizzle the mixture over the tomatoes and beetroot and mix well. Chill in the refrigerator until serving time, stirring occasionally to ensure everything marinates evenly.
- When it's time to serve, layer the raw beetroot slices on a large serving platter. Pour the beetroot and tomatoes along with their juices on top, season a bit more, and serve.
