Heirloom grape tomato salad

Ingredients:

  • 1 lemon
  • 1/4 cup apple cider vinegar
  • 1 garlic clove, minced
  • 1/2 teaspoon Dijon mustard
  • 1 tablespoon chopped chives
  • 1/4 cup chopped fresh basil leaves
  • 1/2 cup plain yogurt
  • 1 cup extra-virgin olive oil
  • Freshly ground black pepper
  • 1 pint red grape or cherry tomatoes, halved (preferably an heirloom variety such as Tommy Toe)
  • 1 pint yellow grape tomatoes, halved
  • 3 stalks celery, cleaned, leaves removed and thinly sliced
  • 6 scallions, white and tender green parts only, sliced

Instructions:

  1. Prepare the dressing right before serving. Place the lemon in a small microwave-safe bowl and heat it in the microwave to release the oils from the skin. Let the lemon cool for a bit after heating until it's safe to handle.
  2. Combine vinegar in a blender and start blending, then add the squeezed lemon juice. With the blender still running, gradually add garlic, mustard, chives, basil, and yogurt one by one through the opening, and blend until the mixture is smooth. While the blender is on, slowly pour in the oil through the opening.
  3. Combine tomatoes, celery, and scallions together and coat them with the prepared dressing.
